There is a simple explanation for Schroder versus Schroeder. If you check the official German olympic basketball roster, His name is spelled Schröder - the umlaut changes the pronunciation of the o from ‘oh’ to something closer to ‘ew’.

When writing in German on a machine where there is no umlaut option, an ‘e’ is added after the letter where the umlaut would have been. This way a German speaking individual will know the correct pronunciation.

In the case where the readers probably do not speak German, it is common to just skip it as whether or not there is an umlaut will not mean anything to that audience.

Either variant is an acceptable Americanized version of the original German name. Since the vast majority of American NBA fans do not speak German, it makes sense for Dennis to just leave it off. Perhaps his wife has a large German following on Instagram in which case adding the e would be preferable.
